After you select the text use color sliders/swatches in right toolbar. Or hide a keyboard and tap Color button in the bottom toolbar.

See, the problem is that when I hide the keyboard the text gets de-selected. And color bars are only "partially" available with keyboard in. The only way now is to rasterise text, protect transparency and fill with color. How intuitive! And this is 12.9" pro.

You have to hide keyboard using key in bottom right corner, not Done/Cancel.

There is no hiding key in Cyrillic keyboard. Too many letters. Alas, I can switch to Latin and do it. Thanks.
