With jitter it’s easy to rotate a brush randomly, continuously, but that’s a mess. It would be very useful to have it change direction randomly only once at the start of each stroke. That would introduce a lot of variation for one parameter.
If this feature already exists, sorry for the post, but I dug deep and couldn’t find it.

Same comment for the color jitters. I’d like to have some variety each stroke but not continuously into a slushy color mess.

Random rotation - it is not possible sorry, only per-stamp random angle.
But maybe you would like to try this: Dynamics>Finger>Angle: Initial Direction.
Per Stroke Color Jitter - you can do it! Just set General>Colorize Each Stamp: NO.

Thanks for the quick feedback! Very sad about the stamp angle, I can go in and change it manually every couple strokes, but I’m lazy :-)

Maybe it’s not a jitter thing, maybe it’s a toggle on the Stamp menu that randomizes the angle on each non-contact return so that it’s then ready the next time pen touches? Who knows, we all want what we want when we want it :-) typical Americans!

It will be a bit easier in version 2.1 - stamp rotation will be kept when you rotate the canvas.
So to get some random stamp rotations you will just have to rotate canvas to some random angles.
